Minestrone Soup

Minestrone Soup was a firm favourite in our house growing up as kids. Check out this delicious recipe!

Ingredients:

  • 400g Carrots £0.12
  • 200g Red Cabbage £0.12
  • 1 Green Pepper £0.30
  • 1 Onion £0.21
  • 200g Spaghetti £0.08
  • 1 Leek £0.30
  • 200g Celery (4 sticks) £0.29
  • 1 Tin of Tomatoes £0.35
  • 2 Chicken Stock Pots £0.45

TOTAL £2.22** for 6 portions.

Method:

Chop it all up! Break your spaghetti in two, then two again. Place veg and spaghetti in a large sauce pan. Add your chicken stock pots and the tin of tomatoes. Fill the pan about ¾ full with water.

Bring to the boil and then turn down to a low heat and simmer for 2-3 hours. Serve piping or hot or leave it to cool and freeze or refrigerate for later.
